Power-Packed Breakfast

When we have a little one to care for all day, it can be easy to forget about taking care of ourselves. I know so many moms who start eating poorly because they don't have "time" or energy to eat right.

This is my go-to breakfast. I drink one of these delicious green smoothies nearly every morning. It's amazingly healthy (full of wonderful good fats, protein, folic acid and lots of vitamins & minerals), delicious, incredibly easy and quick. Even when I'm strapped for time, it just takes a few minutes to whip up a smoothie and take it on the go. You can also make them in advance and keep them covered in your refrigerator for up to three days!

This has been my favorite recipe so far. After drinking them for over a year, I've experimented quite a bit with various fruits, greens and other add ins. The sky's the limit with these smoothies!


Pina Colada Green Smoothie

1/3 cup of unsweetened coconut milk
1 cup of filtered water
3 teaspoons whole plain yogurt (If you don't want/can't have dairy, this is easily omitted)
6 ice cubes
1 banana (they can be frozen too)
1 cup of pineapple (frozen or fresh)
2 cups of kale or spinach (remove the thick centers from kale)
Optional: 1 TBSP of chia seeds. Chia seeds help keep you full for longer, and have lots of other nutritional benefits!

Blend together in your blender for a minute to be sure all the greens are fully blended in your smoothie. In addition to this smoothie being loaded with essential nutrients, breaking down the greens also helps your body digest it and readily absorb it in order to get all the nutrition possible from the greens. I hadn't known until I'd read Green Smoothie Revolution that your body has to work really hard to digest the dark leafy greens because they tend to be so rough. So often your body can't get all the important nutrients they're packed with. Blending them makes it ready to absorb!
