I made this a couple weeks ago and was really pleased with how it turned out! I made a few modifications to a recipe found on Sugarlaws. I had been looking for a recipe that didn't use sugar, and instead use raw honey. This recipe originally called for 3/4 Cup sugar, 1/4 Cup honey, I changed it to equal parts honey/sugar but it actually turned out TOO sweet! Natural honey is a lot sweeter than processed sugar, which is a huge pro of using it in baking! Less sweetener, and honey is more natural/healthier!
Also, I wanted to use it as a recipe for muffins, but it's just too moist for that, so stick with a loaf of bread! :)
Without further ado:
Honey Banana Bread
INGREDIENTS
3 ripe/frozen bananas (thawed) - you can use two if that's all you have as well
5 TB melted butter
1/2 C honey
1 TB cinnamon
1 egg whie
1 tsp vanilla
1 tsp baking powder
3/4 C whole-wheat flour
3/4 all-purpose flour
1 C oatmeal
Optional: 1/2 C raisins
DIRECTIONS:
Heat oven to 350 degrees. Mix together all ingredients EXCEPT flours, oatmeal, and raisin. Gradually stir in flour and oatmeal. Pour into greased loaf pan and bake about 1 hour. Let cool before enjoying!
